Unfortunately, you cannot change the sorting of these columns. Showing issueKey is all you can do in this case.

For the sake of reorder columns, you can try to rebuild the Jira application from the source code by changing this class:
WEB-INF/classes/com/atlassian/jira/web/component/TableLayoutFactory.class
But I think it is a long and unjustified way))
