I am trying to assign a project to an issue type, but I don't see my project available there.
I don't think you can assign a whole project to one issue type. You can remove issue types so they're not available if that would help?
Could you provide a screenshot of what you're looking at please so we can provide further help if needed.

If you go into your Project, then into Issue Types you should be able to assign the issue type from there

As this is a Team Managed template you would need to create the new issue type for this project, clicking on 'Create issue type' on your screenshot will do this.

To add to Liam’s input here in TMP issue types are created per project. So if you have bug in one TMP then you need to create a new bug issue type in another TMP. Issue types are not shared across projects in TMP.
