I would like to know if is possible to keep the option watch turned on to all users that ever was envolved with an issue. Here goes an example:
1. The user A is assigned to an issue
2. The user A updated this issue to state In Progress
3. The user B is assigned to the issue in order to starte the tests.
Aflter the step 3, the user A has the option Watch turned off automaically, but we don't want that

In the system options there is the ability to set default user preferences. What you would want to do is turn on the auto for autowatching your own issues.
So instead of opting in to watch an issue, they would instead have to opt out.
I'm also not aware of a stock process that unwatches an issue automatically, so I wonder if you have a process removing watchers built into a workflow or automation elsewhere.

Actually the parameters Notify users of their own changes and autowatch own issues are already enabled, but after I change the assigned person from an issue the original one just stop watching it

It sounds like there may be something in your workflow that is removing watchers during a transition. Do you have any postfunctions or automation tools in place?
