I have some projects in Jira, and i need that tasks are created when the Jira received a email. but in email configuration i have a standart email that is possible received a mensager and create a issue, i would to know if i can have more emails in jira for to organaze better my projects.
For example, have a email for each project, its possible? or i need to add some email mine?
You can configure additional Incoming mail servers on <YOUR_JIRA_SITE>/secure/admin/IncomingMailServers.jspa and then configure additional Mail Handlers for each Incoming mail server to create/update issues in other projects.

I already was saw this option, but i understood that this option is for add a email that be mine, for exemple a gmail or outlook that i already have.

I am afraid you cannot have more than one Default incoming email provided by Atlassian on your Jira site.
However, you might create multiple mail handlers and differentiate their behaviour to create issues in different projects, even using the Default incoming.
I have done that before leveraging the Catch Email Address field and adding a CC'd recipient email.
