Why am I not able to find and select users from my JIRA project to put into a multi-user picker custom field from a post function? It works fine for a single-user picker custom field, but when I pull up the post function screen for a multi-user picker it appears like just a text box and not a type ahead auto populate field like the user picker does? Please advise how I can properly select project users to be put in the multi-user picker field.

I would use an Automation For Jira rule to populate the multi-user picker custom field. Here is some information to get you started with Automation For Jira if you are not familiar with it.
There are two types of automation:

You can do this via global rules to apply to all projects also. You'll need to be a Jira Admin/Site Admin, go to Jira Settings > System > Automation Rules (left-hand menu).

How would you add multiple users from two multi-user picker fields into another multi-user picker field? Automation for Jira would override the first field's users with the second field users even though I set 'append'. I didn't find anything in Scriptrunner that helps.

If you use the copy feature of adding from one field to the other you get a check box to add to existing values, else if unchecked it replaces.
