When creating a sub-task get an error that mandatory due-date field is missing. I don't see this field on this form. Here is a snapshot for your reference.
Issue types (including sub-tasks) have "screen schemes" which tell them which screens are to be presented to people when they are viewing, creating or editing them.
Your project is configured for a mandatory due date for the sub-tasks, but the field is not on the create screen.

Go to the project, look at the configuration of it, you will find a "fields" section which refers to the field configuration and field configuration schemes.
