My customer is trying to retrieve his password but she is not receiving any reset email (including in her spam).
Customer mail: edurbant@xxxxx.fr
What solution do you recommend? Is there a configuration that I have to do on my side or is it on Atlassian's side?

I would open a support ticket with Atlassian to see if the email address might have been blacklisted.
