I would like to know if a project can be notified differently depending on the type of request (incidence or request). Or if you could have two types of notification maps depending on the type of request

Do you mean different notification schemes for different issue types?
As far as I know, the notification scheme is matching project level and cannot be broken down for the issue type.
But you can try to create a custom event, map different workflows in the two issue types, and reference the respective defined events to achieve.
