We have been using JIRA Cloud for quite sometime now and we decided that its time to start changing things after experiencing how things works both internally and with our customers.
The biggest change we decided to make is to stop creating projects for each customer. This really messes up everything and just complicates things. After some reading we have concluded that we will be handling customer related issues under one Project. Either for on-boarding or several other requests linked from JIRA Service Desk or a phone call etc. The dilemma here is how to separate them inside this single Project. One solution is to use components and the other one is with a custom field.
From our understanding if proceed with component we need to create a component for each customer on the single Project where all issues will be moved (using bulk edit). Now before moving anything we have to create the component on the current Projects, assign it to all issues/tasks etc and then assign them to the new project. Will that be the correct way of doing it? Here we assume that a component must exists on both current and new Project before making bulk changes so that nothing is lost.
Additionally, we are mentioning components here, because this is the way that we will split development projects also and we would like to keep a more "consistent" way of managing things. What I mean by that is that for example Project ABC involves both Android and iOS. Each task will be created under Project ABC will have component as a mandatory field where a user can select either Android or iOS for example. In case something affects both version he has the option to apply more than one components.

Just make things more clear this will be project that will manage the customers internally. Service Desk is already used where each customer has his own access and can raise tickets to support. From there the support team will be creating linked issues into the internal JIRA Project with the appropriate fields. If there is a way to connect the Organizations from JIRA Service Desk to a JIRA Project it would be amazing. From what I am aware of though, this is not possible.
