Hi,
I have created on a project a "people" custom field with the "Restrict to a single user" box checked.
When I go on an issue and fill the field, I can add/select more than one user.
Is this some known defect?
When will it be fixed?

I do not see that behaviour on a people field, setting the "restrict" field means that I can only select one person in the field.
The only thing I can think of is that you did not save the change when you edited the field and selected the flag (I've just done exactly that when testing!)
If that is not the case, then this should be reported as a bug to Atlassian - if you can't do that from https://support.atlassian.com/contact because you are on a free or starter subscription, then please let us know here and we can get it escalated.
I am also having this issue on my "Team Managed Project". I can add a people Context Field and select the "Restrict to a single user" box, but when i edit the field in my issues, I can select multiple people.

I am seeing the symptom with a team-managed project, people field, with the single user restriction enabled, however...
Once multiple values are added to the field and the values are saved (with the checkmark), only the first value saves, and then the field repeatedly prompts to search for users. But it does not show an error. Checking the issue content with the REST API confirms only the first user was saved. So this appears to be a display problem with showing the error.
As Nic suggested, I recommend submitting a defect for this one to Atlassian Support.
