Our Jira is set up to create issue from email. We do not use any mail plugins.
Previously, if I sent email from the outlook, with a tag of "high importance", Jira created a issue with priority "blocker".
Now something has stopped working and issue are created with priority "critical" instead of "blocker". How can I return as it was?

I don't think so. Jira's default mail handler is very limited in that sense. If there is no info about it on the document, I assume it cannot be done. Sorry couldn't be more helpful.

Can you check your default priority on the priority scheme used by that project then?
According to the document, you need to put blocker at the top of the line and choose default priority as one that is below blocker. For example below screenshot, I need to put High as default priority if I want to tag the issues created by mail as Blocker.

How did you configure creating issues from email?
As far as I know, Jira Mail Handler doesn't have the ability to set system or custom fields via email. Are you sure you are not using any additional plugins like Jira Enterprise Mail Handler?
