We are planning to migrate our old instance projects into new instance.
1. We will upgrade our old instance from 6.8.x to match with 7.10.x to match with new instance.
Once this is done what will take to migrate these 10+ projects so we migrate all agile boards, dashboards, data, queries, etc into new instance?
I would like to see if there are in-build migration tool sufficient to do this as we do not want to purchase 3rd party migration tools.
If Atlassian provided tool is not sufficient, I would like to know what are the gaps? What will not migrate if I use the migration tool that Atlassian tools provided?

There is no 6.8 Jira, but whatever you do have, the process is
5 is a manual step because you've said "no 3rd party tools"
step 5: project configurator which will save you a huge amount of time to manual sync all configuration /agile boards...
it's worth the money, and you only need buy the license on the importing side.

You could use a xml backup to restore your existing data on the new server, see Migrating Jira applications to another server Just make sure that your new instance have all the same apps as your old instance does.

Sorry for the confusions. What we want to do is export projects from old Jira and restore them in the new instance. This is the route as we don't want to restore everything from old to new.

Without an app you are limited to what you can do. The project import that @Nic Brough -Adaptavist- mentioned below will try and recreate the specified project from the xml backup, but if you are using apps those configurations may not be imported, see Restoring a project from backup. Your other option would be to do a full restore on a test instance, delete the project you do not want on the new server, do a new xml backup and restore this one on the new instance.
