you can search with JQL for issues in project and see how many results it returns.
though, you will only get the issues you have permissions to see

if you are on server/dc, look for a "issues" button in the top menu, "search for issues" and either select a project you want in a "basic search" view or use "project = KEY" (your project key) in advanced search view.

wait, staging and production are two different jiras, so if you have issues on production, there are just probably none on staging.

If you are using a server, go to project settings (cog item in a bottom left while you have any of this project page open), then reindex (should be jira admin i believe).
