Is the "Resolutions" issue attribute used by all projects in our company's Cloud instance?
If I modify the Resolution values (add, remove, or change view order), will it impact the other projects as well, or just be seen in my project?

that is something I was trying to solve just today.
Resolutions cannot be set per project, just globally, unfortunately. So if you change resolutions in your Jira Administration, it impacts all the projects.
You can use a workaround by setting workflow properties though, as described in accepted answer here: https://answers.atlassian.com/questions/192090

Resolution are available to all projects in the JIRA instance. The values and display order are a global setting, not a per project setting. If you make changes to the global settings that will impact all projects.
