I have a Kanban board which shows issues from multiple boards.
If I use the Release button and create a new version, is that version then created to all the Projects that are part of that board filter or how does this work?
Wasn't able to find this in any documentation and I'm not feeling lucky enough to just try it..

Are you on the standard or premium Jira Cloud license?
I believe for standard the Release button functions only apply to the scope of the project where the board lives. It does not influence the other projects, even when the board shows issues across different projects.
For premium there is specific functionality to handle multiple-project release management.

Logically if the popup suggests that issues will be Released from all these projects on my screenshot, I'd imagine the "new version" is created to all of them.

We do also have Advanced Roadmaps, so that makes me think we're on Premium.

Yes, if you have Advanced Roadmaps you are on the Premium license.
I do not have that version so I cannot try this multiple-project release in the way you can. Please check in with your site admin to see if they know the answer, or wait to see what others in the community suggest.

I do have to say that after finding this, I'm pretty sure that's how it works even though the article doesn't specifically mention Releasing from the Kanban board...
"When you create a cross-project release and commit it to Jira, the release will be transformed into a regular release in each of the Jira projects that are part of the cross-project release."

And it appears you may group existing releases if they were not created via the Advanced Roadmap features.
For stuff like this where I don't have experience, I recommend people create a couple of test projects to experiment a bit. That is easier to confirm and understand the functions...rather than trying to "undo" something in a production project.
