In our JIRA instance, we use versions as Releases rather than versions of an application. Some of our teams create the lists of Releases in advance for the year. This results in a long list of Unreleased Versions. Is there a way to enable the Fix Version/s and Affects Version/s field to be able to search within the list for the desired value? Or is there a way to enable the fields to allow users to type text within the field to narrow the values based on text typed? Maybe similar to how links work?

There is a Suggestion to incorporate the Versions' fields searchable using JQL. You can find this at JRASERVER-64868 - Make Versions' fields accessible for JQL filtering. Please vote on the issue and add your use case to the comments to add impact.
One option suggested here was to use the J-Tricks plugin.

Thanks for the update, but this is not really what I was asking. I am more interested in searching within the affects/fix version field for a Released or Unreleased value when trying to populate the attribute. Similar to something like what is available for the Components field.
Currently, the field just allows you to scroll through all the options:
