Hello!
Jira issues contain a history (for example: when an issue was added to a sprint or changes status). Is there any way I can use those fields/data in a filter? The specific thing I'd like to be able to grab is when an issue is added to a sprint. Sometimes we add stories to the sprint after the sprint has started, so filtering by the sprint itself is not enough.
This data that I'm looking for is included in the History, as well as the Sprint Report (and other various reports), but I can't figure out what I would use to find those issues in a JQL search.

You cannot search the history with the default JQL (there are a handful of exceptions that can be searched by using was and changed). You would need an app in order to search any field. I know JQL Tricks can do it, but there are other JQL extension apps in the Marketplace that can do it too.
That is kind of frustrating that Jira has the data but I can't use it. I'll look into some other apps, but find it disappointing that I'd have to pay extra for data that already exists.

If you're interested in issues added after the sprint is started, maybe the Sprint Burndown chart can help. It shows all the issues added/removed during the sprint. The date is available.
Also, there is the scope change log in the table view. It helps me sometimes. Have you tried it?

Yes, but I'm looking specifically to get it into a filter. I know the data exists within Jira, which is why it's kind of frustrating that I can't seem to search/filter for it.

I second that! There is a date I need to use that shows in history, however, I am unable to extract the date either through JQL query or field.
