I'm creating a subtask in an automation rule, in additional fields I specify:

The description shows address@domain.com but the subtask remains unassigned. I tried the following variations without success:

I don’t think this is possible. I believe Assignee field expects to get accountId of the user, e-mail is not enough. How does your process look like? Is it possible to use User picker custom field instead of Text field with the e-mail? Thank you.

You can try to send request to REST API and find the user. Please look at this article, it is very similar to your problem.
