Workflows are more complicated that you're expecting (for company managed projects). You'll need to review this tutorial or video.
You cannot edit an ACTIVE workflow in major ways, like adding new statuses, transitions, etc. You can make changes to post-functions on active workflows (that's a bit more advanced).

project-admin is not enough to create new workflows, since they can affect other projects as well. You'll need to be a higher level admin for company managed projects. (that is, an actual administrator for Jira)
If you're doing a team-managed project, you can edit the workflow pretty much on-the-fly, you'll just need to find the various buttons that allow you to edit the workflow. They're much simpler.
There are tons of other questions around this, already answered - if you check the "related community content" section to the right of this question, there could be some additional help for you already available.
Issue fields are also potentially quite complex. You cannot create new ones without more admin powers (being the same level as the ability to change workflows). The "Configure" button on the bottom right of a ticket helps with the layout (also available in the project settings), and you select the available fields from the "Screens" section of the project.

Hi Chris - thanks; it is a team-managed project; it is solely for me to use - my sandbox.
What I am trying to do is create a (Jira-based) project that manages the releases of multiple projects. I'm thinking of setting up an epic per product. An issue in an epic goes through a workflow; the states of the issue represent different steps of the release and the workflow represents the release process.
What I see is that in Jira if I select the release feature, a fix_version is shows up for Jira issues of the project. What I want is to modify the workflow and add my own states for each issue; an issue in this case is a Release Ticket. Fairly simple and should be possible I think.
