When I type "@" inside an issue then I see entries for Trello, Outlook and Slack!? Why do they appear and how can we get rid of them..I only want to see my users - nothing else.

When @mentioning in Jira Cloud, users and groups will populate.
What you're seeing with Trello (and Outlook and Slack) are the integration users required for those apps to work correctly in Jira Cloud. Apps in Jira Cloud need a way of accessing your instance to read data and make changes to issues.
In addition to the app users, we recently added Groups (seen above in the screenshot - the number of users in the group is listed under the group name). Clicking on one of these groups will drop the name of the group in the comment box and expand out all the members so they get notified of the comment / @mention you're making.
I hope this clarifies how the @picker works! The short answer is that you're seeing those entries because the apps they represent have a user on your site work properly.
