You can edit sprint adding start and end date without starting it.
Please go to edit sprint as per the following screenshot
you should be able to edit these information without starting it.
Please, remenber that, in order to do that, you should have "Manage Sprints" permission according with your porject permission scheme.

it seems like I have all the permissions, but I don’t have “edit sprint” button. I use server version of Jira (not cloud), maybe it is important

my screenshot is related to a server instance. If you have "Manage Sprint" permission you should be able to do that.

My version is 8.5.17. I have an admin permissions for project. This info is in the article you gave me: “To allow the management of a specific Sprint in Jira, the user must have the Manage sprints and Schedule Issues permissions in all the projects returned by the board filter where the Sprint is located.” All this points are true for me…

did u check Schedule Issue permission for your user?

My user have roles: administrators, Dev Lead, Managers, Tempo Project Managers, Users. Permission Schedule Issues granted to Administrators, Users, Developers.
My board concerns for single project only.
