is it possible that a story, when it changes its status (eg. "in Progess" --> "Testing"), "loses" its assignee, so that all team member can see, that they can pick the story and no one is testing it?

@Gerd_Huhn, you can add a post function to the transition between the statuses. Use Update Issue Field and set Assignee to unassigned.
