Over the eekend, a board we have on our site is suddenly no longer accessible to certain members of the team. As the org admin I can still see it but people that were able to see it are no longer viewing the entire board

Does this means that certain members aren't able to see the entire board, only few work items?
You can try validating the below options;
1) Change in the filter permission
2) Change in the project role or members removed from the permitted group
3) Any issue security scheme

When you say entire board, what do you mean? Do they cannot see some of the issues within the board? If that is the case, do you have any issue security schemes applied to your project?

Its the entire board. They can see other boards linked to the same project, but the specific board they use daily is no longer visible to them, but visible to myself.

This means that this board has been set to be shared privately, which is you. You need to adjust the filter permissions to be shared with the project.
