is it possible that you have a custom field that someone has added and named summary? Obviously this would be a very bad idea to reuse a primary system default field name for a custom field but I have seen this occur many times. If this custom field is chosen as one of your columns and there's no data in it that would explain why you're not seeing it. Short of that I have never seen the Summerfield not displayed. What would be worthwhile trying to do would be to go into advanced issue search and create a filter for that same project and include the summary field and see if it displays.
Thanks, Jack. I definitely think it's a bug. They display at random and then decide not to show! I'll try your advanced issue search suggestion and let you know.

Yep the advanced filter worked. Leads me to believe that is a JIRA issue.

Thanks Jack. Just an update for everyone experiencing this.
It's something they're aware of, however, a temporary fix is to clear cache. I also switched to Firefox which resolved it. Not ideal but seems to be the best fix for now.
