I am new to Jira, so I might be doing something wrong but the workflow doesn't seem logical to me. Whenever I create a Kanban or Scrum Board, every task created in any of the previous Kanban or backlogs in any Scrum get replicated in any new one I create. Have to make a screen recorded video for the same if need be. I have no idea why this is happening and is very frustrating. Would appreciate any help I can get with this.

are the jira issues really replicated, so that all of them get a unique key / number? Or are the same issues displayed in all of your boards? Maybe you can show us screenshots of two different boards?
Please note that boards only show issues in that certain projects you create your board in (by default). They just give you a more powerful view on your issues within a project. In that case every board in a project works, when it is new created, the same and they will show the same issues.
I guess they are all showing the same board because a change in one is replicated across all boards. Is there a way we can have different boards for smaller elements of all projects?

Here's an example. I have attached the boards for two different kanbans which have been populated with a third kanban board. I even made the change in one and it changes in all three. Is there a way I can split all three?

not sure what you really want. What do you want to "split"?
When Boards in Cloud works the same as they do in server, then you can configure your board and what it displays. If you want to display some issues in board A and other issues in board B you have to have a field where you can determine that e.g. all issues with field-value x are displayed in board A and all issues with field-value y are displayed in board B.
In order to do that, you should see the option to configure your board (top right of the board). There you should see the filter that is applied for your board. This filter have to be changed with the above explained.
For further explanation I recommend to read some atlassian documentation regarding kanban boards and how to configure it.
