I've noticed that when my teams close both a ticket and a sprint, the Team will be removed from the Team system field. I don't see any automation that my teams have set up to cause this so I assume it's by design?

That is not a native feature of Jira. I must be getting done by some customization. Possibilities are:
1. An Automation Rule
2. A workflow post function (when it happens based on a change of Status)
3. A script, which could be triggered in a number of ways
If the Team field is being cleared, there should be a record of that in the item History. Check that to see who is responsible for that change. If it says "Automation for Jira" then it is definitely an Automation Rule. If it names a specific user, that could still be from an Automation Rule but may be from some other source. Check what other changes happened at the same time, and who made them.
Thanks, Trudy! I will check all of that - so far, not seeing any automation, but maybe it's a workflow post function, as you'd mentioned.
