I am looking for a simple and organized way where I can track all the projects in jira, the issues and status of issues under each project, the assignees etc.
One idea I have is to pull jira macro for each project, wondering if there is a much better way to do so

There are lots of threads in the community about this topic. Most Jira users ultimately conclude as-is Jira doesn't really have great facilities for cross-project (project portfolio management) tracking.
Not to worry, Atlassian themselves offer Advanced Roadmaps. Unfortunately, that's not an option for you unless you plan to migrate to Jira Data Center.
Luckily, a number of Atlassian Marketplace app vendors also offer solutions -- many are still available for Jira Server. Have a look:

I suggest you scan the list for the right description (for you) and the ratings to narrow down your search. Then take a closer look at a few.
Full disclosure: The company I work for makes one of the apps you'll find on the list, Structure for Jira, and it's one of the highest-rated. But, there are lots of other good solutions too. Hopefully, one of them will be right for you.

Advanced Roadmaps would be a great solution for this (see https://www.atlassian.com/software/jira/guides/roadmaps/advanced-roadmaps ) although as @Dave Rosenlund _Trundl_ rightly points out this is now only available for Data Center and Cloud (on Cloud it is included with Jira Premium) - I'm not sure if you have any plans to migrate to either of those platforms?

I'd suggest using a filter that isn't project specific, then a Dashboard to manipulate the filter data

Hi, @sim.sisavuthary. There are a number of Gantt apps for Jira. You'd have to share which one, and whether you are on Cloud, Server or Data Center, in order for someone here to be able to help you. You may wish to post more information in a different thread.

If you do an advanced search, you can save that default filter as it automatically has all issues on it.
You'd then need to work with Dashboards to output the data as needed. More information on Dashboards can be found here.
