Trying to set up workflow and dashboard reports

I am new to JIRA Project admin.

Trying to update a workflow that is open to every direction (any status to any status).

I want to tighten the reigns and be able to report of the dashboards.

I need help/ideas how to set up the JIRA project, the workflows, and dashboard reports.

Can anyone share their idea/experience with me?
