Unable to change columns to display in Projects Issues list view

The default columns are Type, Key, Summary, Assignee, Reporter, Priority, Status, Resolution, Created, Updated, and Due. 

Several of these we don't use, and I'd like to see others that are used, like the EPIC it is attached to for example. 

I don't have ANY button anywhere on this page that will let me customize these columns. I've spent a lot of time trying to figure this out and I give up. Please help!

Correct. This page is static as far as the columns are concerned. What you can do however is save that as a filter I using the same filter link at the very top. Then navigate to advanced issue search (click into the search bar) and in there select your saved filter and adjust columns.

Or if you don't want to save it just copy and paste into the advanced issue search.
