Uploading CSV question

The team I joined used a spreadsheet to establish user stories, estimates, etc. A colleague and I saved it as CSV, massaged it, imported it and it actually worked. However, the team is using hours instead of story points. So be it. But when I import it, the one field that it never shows me to map is Hours. Any thoughts on why this is? Do I have to add that field somewhere?

I assume you are looking for the Original estimate field? Can you go into the detailed issue view of one of your issues and click on the configure in bottom right. Check to see if Original estimate is available.

also be sure you have estimation enabled - configure-estimation-and-tracking

That worked. At least on my 'play' project. My real project isn't showing all the fields (e.g Epic, Epic Link) on import. Do I have to add those in somewhere? Odd

There is no epic link in TMP rather there is a parent. You can add an epic under project settings issue types. You may find that TMP is too limited for your needs. However here is a link to estimation associated with TMP - enable-estimation

Your instincts were right - Jira does not have a simple "hours" field off-the-shelf, so you have to add a custom field for it, or use another system field.  The same applies for any other field Jira doesn't do off-the-shelf - you'll want to create a custom field for it or think about if it's appropriate for one of the existing fields.

For hours, I'm with Jack, it's probably an estimate, so the time-tracking field is the place to look!

Team-managed projects don't really support Epics properly yet, theres' nowhere to import that into one of them

Yeah, it should have never been team-managed. Somehow every time somebody else screws up on a project I'm the one who has to fix it. Anyway, no worries. I actually somehow got it to import both stories and epics. I'll link those, put the hours in manually and let these people rename the user stories to tasks. It'll give them something to do.
