I am the the company administrator for our Jira ondemand account which we recently started using. I have created an issue within a project. The project leader has subsequently changed the priority of the issue. We are surprised to see that there is no evident record of that change of priority within the thread of the issue. Is there any special view we need to go to to see the full change history of an issue?

Look to the "tabs" below the activity section title (which don't really look like tabs to be fair).
By default, you'll see "comments" only, but you can find a full history too (and work logs etc)
