Whenever I'm creating a new project, a default group of users are being given permission to the project. But I don't need this group in all my projects. How do I change this default setting?

Is the group being assigned to a Project Role in new projects? If so then it is likely that the group has been added in the Project Role configuration

User group is being assigned to new project. Users are not of a specific role. They have different roles and permissions. And this group is being assigned every time I create a project.

You need to refer to the Global configuration for Project Roles at
https://yourJiraUrl/secure/project/ViewProjectRoles.jspa
This page is where the Project Roles available for Company Managed projects are defined.
Here it is possible to set Default Members for a Role. When Default Members are specified for a Project Role here, then for each new project created the Default Members will automatically be assigned to that Project Role in that project.
If you don't want that to occur you need to select the Manage Default Members option for the affected project role and remove the User Group from there.

After creation of project by default permission scheme will be there so anyone in the organization can see all the project if they are having Jira access,if you want to see only particular user role can create a new permission scheme and associate that scheme to the existing project. if you do the changes in the default permission scheme the change will effect to all existing project so better you can create new permission scheme.

Project visibility is not the issue. A specific group of users are assigned to this project by default for some reason.
