We are running Jira 7.1.10 on-prem and we need ALL issues (well, at least in all projects that have an Issue Security Scheme) to have some security level but it can´t be "None." So we want to globally remove "None" from the options. We tried https://confluence.atlassian.com/jirakb/remove-none-from-the-issue-security-drop-down-list-646250938.html but unsuccessful at implementing that.
Other ideas?

Go to the project settings -> Fields and set Required for the Security Level field.

It is the most global way to do. Do all your projects use different field configuration schemes? Mostly one field configuration scheme is used for multiple projects.

You only need to do it in the field configuration schemes. I would hope each of your field configurations are used in more than one project.

We do use different field config and issue security schemes for project but try to re-use them as much as we can. Despite of having a default Security Level, some issues are created without a Security Level :/ Not sure if this is a bug or not.
@Joe Pitt are you saying I should set "Security Level" as a required field in the Field Configuration Scheme?

As @Alexey Matveev said, the way to get rid of the None option is to make the field required. If the field isn't needed don't put it on the issue or set it to required in the field configuration scheme that applies to that issue type.

I am using a Jira 8.1.0. I set Security level field to"Required" in the Field configuration set-up. Whatever I still have "None" as a possible option while I want to remove it.
Is there something else to do ?
Additional question : Can I rename the field ?

Same here. The option None is still shown in the menu. But if you choose it, it will say that a value is requiered.
