Which completed sprint information are you asking about?

If you delete a board, the reports that you accessed through that board are no longer available.

The burn down and planning type information e.g. points at start of the sprint, changes throughout a sprint (work added and removed), points at completion. Work completed in a sprint and therefore historical velocity etc etc.

I guess my concern is your last statement ie without the board I lose access to the (historical) analytics.

The board is the access point for getting to the Reports. If the board is deleted, there is no access point.

Also, the Reports are associated to the board because they are based on the Filter used by the board. The filter of the board is not contained in the reports. If you modify the board filter then the reports are retroactively modified. So, if you delete the board, the reports have no basis for collecting data.
