subtasks-stories-epics? Is there another level possible?
Issue (story) -> Sub-task is all you can do in plain Jira (Jira Core / Work Management).
Jira Software adds Epics as containers for Issues.
Advanced Roadmaps adds Themes and Initiatives above Epics
There are other apps that can implement layers for you as well - Easy Agile, Big-Picture and so-on.
For more flexibility for other layers above, in-between and below Issue + Sub-task, take a look at the Structure app.
you might try Epic Sum Up on Server/DC for an easy way of extending hierarchies and summaries.
On Cloud there is the container feature missing, but it will be added in the next version.

@Nic Brough -Adaptavist-Advanced Roadmaps do no limit what you place above Epic level, so you can have any number of levels and types.

Yes, you are correct. If you need to create another level above Epic, then you will be a Advance Roadmaps. Else you may also look into other add-ons in the marketplace for hierarchy: https://marketplace.atlassian.com/search?query=hierarchy

You can issue links to create your own hierarchy.
