What things may need to be updated as a result of workflow changes of any kind?

The follow-up questions you have asked are not specific enough to be answered. They are answered in the documents pointed to, but if you are not finding them, you need to be more specific.
For example, there's only one answer to "What things may need to be updated as a result of workflow changes of any kind?", and that is "almost everything in Jira". It totally depends on what you're trying to achive by changing the workflow. A workflow change could mean you need to change fields, projects, issue types, users, email settings, listeners, plugins, and and and and... Although it is more the other way around - your workflow changes should be driven by what you are trying to achieve, and that might need changes to lots of things, including workflow.
The others:
"Limitations on changes to simplified workflow": Invert the question to "what can I do with" or "what are the benefits of" a simplified workflow, and then read the simplified workflow doc again.
"Changes to status and transition" - I'm afraid that very much is answered by the workflow docs. They tell you everything you can do.
