Unfortunately, that field is not available yet for Bulk Update or Automation Rules. Not aware of a timeline when it will be either.

The field is there for me in bulk edit.
It won't show up if you have Sub-tasks in the filter (as these should inherent Team from the parent), but if you exclude them it's available.

You can also use Automation for this, you can set a Team via advanced editing on the Edit Issues action.

I don't know if this problem, in itself, justifies additional tooling for you, but just to put it out there: If you're open to solutions from the Atlassian Marketplace, this works as expected in the app that my team and I are working on, JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields - including the team field - much like you’d do in e.g. Excel or Google Sheets. It also supports bulk editing via copy/paste, like so:
You can update any number of issues in one action, so you should be done with your work in no time. I should add that JXL can do much more than that: From support for configurable issue hierarchies, to issue grouping by any issue field(s), sum-ups, or conditional formatting.
