Why is Original Estimate not a bulk editable field? If I'm managing multiple tasks with similar processes I want to assign them the same time. My group produces 300-400 tasks a month. Now in cloud I have to go into each individual task and assign it hours? How is this a solution?

Unfortunately this is not possible as you say - there is this open feature request you can vote for, but 6 years ago there was an update saying that there are no plans to implement this for the forseeable future so I wouldn't epect it any time soon...
There is a workaround mentioned which might be helpful to you, involving editing these values through Jira's REST API, but it looks like this is the only option other than manual effort at this time.

There is a comment on Apr. 22, 2021 from a person self-promoting an app they created that would allow bulk update of the Original Estimate.
You could create a manually triggered automation rule to use Lookup Issues to select the issues you want to change, then a Branch to Edit each issue. This would effectively allow you to bulk change the Original Estimate (assuming it works - I didn't actually try to run it).

The video shows only a small number of issues, but bulk edits work for any number of issues in one action, for all editable fields. (JXL can, of course, do much more than that - see https://jxl.app for all info.)
