Has anyone come up with a workaround to be able to have people vote on issues in jira next-gen? I was thinking of having just a numbers field that could be edited each time someone else wanted the idea and having them increase the number field by 1 but that seems a little but silly..

Unfortunately, there are no better workarounds to vote for issues in the next-gen project than the suggestion you mentioned, although a user could add the wrong number in the field.
In fact, the voting feature is missing the New issue view of JIRA, which is the only view available for Next-gen projects.
Since both the new UI and Next-gen are lab features, our developers are still working to have voting and many other features implemented. For this specific matter, you can check their progress in the feature request below:

I suggest you to vote and watch the feature request to increase its priority and also receive notifications about any updates and possible workarounds suggested by the Atlassian team or even other customers.
