we have 4 different projects in Jira Service Management, all of them have different workflows names, but when we modify the name of a status of the workflow, this status name is also been modified in the other projects. How can we avoid this problem?

Statussen are configured globally. This is a common misconception that while a workflow is different across projects, the status can be re-used.
Hence, make sure the status that you use can be changed on all projects it's being used.
If not (like you have right now), you should create a new status (with that new name) and remove the old one from the workflow.
Just make sure any transitions/postfunctions/validators/conditions/... are also re-configured to the new status.
When you publish the new workflow Jira should ask you to migrate the issues over from the old to the new status.
