If I create a new story or task, the display of JIRA ID is fine, but everytime when I update this story/task (just update normal fields like the assignee, story points, deadline, etc., the story/task status is still in kickoff or doing), then the JIRA ID will be in strikethrough like this:
This strikethrough happens when an issue is resolved.
An issue is resolved when the resolution has any value at all.
The most likely thing that has happened here is that an inexperienced admin has added the resolution field to the edit screen.
The resolution field does not let itself be left blank when it is on an editable screen. (Note - it is NOT mandatory, you just can't leave it blank, there is a difference). So when you've got it on the edit screen and you edit an issue, you resolve it because it is filled in.
Please have a look at UR-1 in the standard issue view (https://yourjira/browse/UR-1) and look at the value of the resolution field.
You will find it has a value.
If that value is "Unresolved", then your admins have gone even more wrong - they have added a resolution option of "Unresolved", which is now lying to you - because it is a value, the resolution field is filled in, so the issue is resolved. It doesn't matter that the value claims to be unresolved, it's not, because there is content in the field.

Strikethrough means the resolution is set, make sure your resolution is not set.
Contact your Jira Admin to check the workflow to set the resolution at the end where you have Done status

The resolution is not set, for example, I only update the assignee or even just change some words in title or summary of one newly created JIRA task, the strikethrough will show up, and the resolution still remains unresolved also the workflow has not been changed.
