how do we know whether xml backup is recommended for a setup during migration. till how much gb data does xml backup support during server migration
Yes, you can use XML backup and there is no limitation. But let me share my experience.
Our confluence instance is quite large instance and XML backup is around 4-5GB. But when I import it back again process has been hanged. However after few weeks I noticed that issue has been occurred due to third party add-on.
So before try this this in production instance, try to export/import XML backup in staging instance. :)

have you tried switching the db's using xml backup, as we are trying to change the db from MySQL to postgresql

Then you have to use XML backup feature or any other tool. Best thing is try in a staging instance and verify before and after;
Also make sure to use server which has enough CPU and memory. Otherwise your XML import may hang.

Just to share my experience I started to restore a 40GB zip file backup since Friday (4 days, 14 hrs, 55mins and 5 secs and it still on 1% completion. Not sure how long this could take but it must not be a good way to restore data (even mimicking it to stage environment)

If I understood your question correctly, the answer is that there's no limit size on the XML Backup. The only issue is that the larger the backup the more time it will take to import all the data, I've seen XML Backups up to 3~4 GB and it takes many hours to complete an import.
Depending on the situation, you can create the backup using a database, like pg_dump or mysqldump, as that could be faster.
