When we create a ticket in a Jira project and we select the sprint, we visualize all the sprints.
We see the sprints of our current project and those of other projects.
Please, how can I restrict the list of sprints to see only those of the project concerned?

Unfortunately, this feature isn't in the cloud version of Jira although it's in data center version https://confluence.atlassian.com/jirasoftwareserver/limiting-sprint-selection-to-relevant-sprints-1014679373.html
There is an open feature request that you can watch and vote for: JSWCLOUD-10805.
As long as it's not there, a suggestion commonly put forward to help you out is to include (a reference to) your project's name or best is key in the sprint name. That makes it easier to find them in the list and improves overall search options, as there is no restriction in Jira that enforces sprint names to be unique either.

Sprints do not belong to projects, they are an artefact related to a board. There's no way to limit a list of sprints by project, because there's no direct relationship between them.
