@Chuck Oleary You can see all your custom fields in the admin Section, Issues--> Custom Field.
You can also get it using the below API endpoint.

To get a list of custom fields in jira , you should go jot jira settings then select issues and pick custom fields where you'll find all created fields with their details
Also if you have jira cloud use the rest API by sending a Get request to retreive all fields .
Another solution you can use another tool of label from Marketplace that can show only the list of your custom field .

You can get a list of all custom fields created for Company Managed projects by clicking on the gear icon next to your avatar and select Issues, then go to the Custom Fields page.
This does not include custom fields created locally within Team Managed projects. Do you allow Team Managed projects to be created in your Jira instance?

I'm able to see them in the UI, what I'll like to do is get a list of them.
I have 2 separate organizations currently. The first one is overly customized and has a lot of complicated customizations, projects, workflow etc.
I'm being asked to bring the tickets from that instance into my current, very streamlined configuration, without bringing all the unnecessary customizations that have happened over the years.
Looking at the migration tool and it appears as though I might have no choice to to bring all the bad habits into my "clean" system we've had for 3 years. As I will not be able to re-map the custom fields.
