I will start and say I have imported issues in excel into jira before (at the task level). However, I now want to do it at the subtask level (we created "pentest"). I assume the hierarchy is how I have it laid it out below.
In the past, if I wanted to import (via excel) a task to a EPIC then I would use "EPIC link" to ensure my tasks were created under the correct EPIC.
Now, I want to do this at a lower level. Currently, I want to import my "pentest" (subtask?) issues to existing tasks. As I mentioned, in the past, I would use "EPIC link" to do this. But since I am now at a lower level, what can I use instead of EPIC Link? How do I tell excel/jira to link these pentest issues to existing tasks?

Try using the field Parent.
