Hi Team,
while editing the Jira workflow status for the specified project, it is affecting the remaining project workflow statuses.
Is there any way to do this change for one workflow without affecting other workflows?

Workflow Status is same for all the workflows.
If one project you crated a status "NANI" , as in "In Progress" category (Blue).
When ever you use "NANI" in other project , it will be displayed as same (IN Progress(Blue)).
If you change in one project all the other projects will get impacted.
When ever there is need to modify existing WF.
1. Please check does the workflow is available for single project or multiple projects.
Go to settings --> issues --> Workflows -->
According to the above example, The workflow is associated with two Workflow schemes.
If these schemes associated with multiple projects , all these projects will be effected.
2. to Reduce the risk.
You can copy the desired workflow in "settings --> issues --> Workflows --> " and apply changes on the copied WF.
3. Then associate with Issues types in "Workflow Scheme".
