Remove default field configuration assigned to issue types

Our projects were originally set up to all use the default field configuration.  By doing this we are unable to use specific fields and/or make them mandatory for certain issue types.

I need to be able to use a field configuration I have created for each issue type.  Please advise how to correct the default configuration and assign the field configuration we would like to use.

I need to disassociate the default from projects in order to delete it ( if possible since it is a default.  I need to associate projects with a different field configuration than the default?  Thank you for the link but I need a little more help with this?
