Is it possible to generate a pie chart or a customized report where I can compare the number of issues and story points each assignee is working by sprint or by month?
I am able to generate a pie chart from the "Reports" page, but the pie chart only gives me the total number of issues each assignee has worked on for the entirety of the project.
What I am looking for is to be able to see (whether a pie chart or report) the name of the assignee, how many issues they have taken on, and the number of story points total for a specific sprint or for the month.
I am trying to see the workload for each assignee and make sure that they are evening spreadout.

If you want to get an assignee time report, I recommend you try Time in Status for Jira Cloud.
It generates 7 types of status time reports including the one. It shows how long each assignee has been working on each issue. So you can easily compare the number of issues and story points each assignee is working by sprint or by month.
This add-on is developed by my SaaSJet team and has a 30-day free trial version and free up to 10 users. So you can give it a try.

If you're interested in a table-like view on your data, my team and I work on another app that you might like: JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It also comes with a number of advanced features, including support for (configurable) issue hierarchies, issue grouping by any issue field(s), sum-ups, or conditional formatting.
With these, you can build reports like e.g. this one in just a couple of clicks:
You can also easily group by multiple field, like e.g. assignee and sprint, and much more. As you can see above, your view remains fully interactive, meaning that you can work on your issues directly in JXL (but also trigger various operations in Jira, or export your data to CSV or Excel in just a click).
