please can anyone help find reports where I can get the following information:
all project, assigned to, estimation time
eg.
project X is assigned to one person Y and person Z and they have an estimate of persons Y - 5h and person Z 7h
project M is again assigned to person Y and person Z and they estimate person Y - 12h and person Z 7h

Bloompeak Support is right - a project is made up of issues, and each issue is assigned to 1 person.
If you just want to see the issues, who they're assigned to and what the remaining time estimate is vs. the original estimate - you could go to 'issues' > 'advanced search' and see a list of issues. You can save these as filters and share them with your colleagues. You could even export the list.
If you want to aggregate issues up to projects and projects up to Epics you could use 'Advanced Roadmaps' but this is a feature in Jira Premium product plan so you'd have to pay extra above the standard product plan pricing.
For this reason I use the Google Sheets - Jira plugin I like it because it lets me set up a datadump which I build reports off in separate tabs and I can schedule it to refresh hourly (that's the best bit). Of course you wouldn't want that frequency with a large data set - daily and out of hours would be best.

My problem is that I have one person on several projects and he or she needs to estimate the time to task what they need to do for each project. After estimating the time I will add up the time and see how much time/days it takes for each project to be done.

You're very welcome. It's probably worth adding time remaining in there as well - you might have tasks estimated that end up taking longer than expected and when you log work you can choose to set the time remaining to indicate where a task is taking longer than expected.

In Jira, projects are not assigned. Issues are assigned to users. Also I couldn't understand the what do you mean by "estimate of persons" Can you clarify your request a little bit more?
