If the project has been deleted by an administrator there's no way to undo this unless there's a backup of the instance available.
But maybe your project isn't deleted and your user account simply lost the writes to access it?... Your account needs at least the "browse project" permission to see the project.
In any way, you should talk to one of your JIRA administrators about that issue.
